Day 2

I started out with making my son his favorite pancakes, Bob's Red Mill Gluten Free Pancakes. So, I decided to make my own batch. I made it with rice milk. It was really good!
Lunch was the same as yesterday and then dinner was taco salad. It just does not taste the same without cheese but I will get use to it.

Day 1

I was really stumped on what to eat yesterday. Plus I had the addition of a little depression about my grandmother passing, the day before had been the funeral and I had been in New York.

Breakfast - blueberry buckwheat pancakes with 100% maple syrup.
Lunch - Hot dogs that don't react with my son, tortilla chips, and pineapple.
Dinner - Steak, salad, and safe tater tots.

It was not all bad. I really wanted a quesidilla but I think it will become better as I get more food figured out.

Why?

I entered my third trimester of pregnancy this past weekend and with that, I was going on a diet that takes gluten, wheat, egg whites, nuts, tree nuts, seafood, and fish completely out of my diet. I have decided to also do dairy even though the only suggesting was to limit it. I am also limiting my soy intake. This diet will go from now until 6 months of breastfeeding.

Why would I be crazy enough to do this? My son is allergic to wheat. He also had an allergy to milk but his most recent testing says that he is no longer allergic. We tried to test it with him but we did not succeed due to him being on antibiotics at the same time. We will be trying again shortly. Because of these allergies for him, the allergist suggested this diet for me while I was pregnant and breastfeeding to give our second child a chance at no allergies. Who knows if it works or not but I am more then willing to try!
